The Big Bluecado Salad – a great combination of blueberries & avocado

This Blueberry Avocado Salad is easy to make and is a great starter or side for any Mediterranean style meal. We love it with chicken and fish dishes. We deem it pretty much essential that you serve it with fresh berries. Your guests will love it.

It also makes for a great and healthy lunch. In fact, you can turn this into a pre or post work-out meal by adding some grilled chicken. The


For the Dressing :

1/4 cup of apple cider vinegar
1/2 cup avocado olive oil (or extra virgin olive oil)
1/4 cup of honey
1.5 tsp of Dijon mustard
Salt and pepper to taste

For the Salad:

Spinach (combine another green like arugula or kale if desired)
6 – 7 ounces of fresh blueberries
2 ripe avocado, cut into cubes
5 ounces crumbled feta
5 tbsp of sunflower and/or pumpkin seeds
Optional – dried cranberries (for a sweeter salad)



For the Dressing:

Combine all the dressing ingredients in a bowl and whisk. Add salt and pepper to taste. Add additional honey to add extra sweetness.

 For the Salad

Put clean spinach (and other greens if desired in the serving bowl). Add the berries and additional items and toss. Pour the dressing evenly over the mix. Toss lightly. Serve.
