The Berry Healthy Summer Salad

This delicious salad combines arugula, berries, and avocado all topped with a delicious honey-mustard dressing. The Berry Healthy Summer Salad is super easy to make, and like some of our other salads, it’s a great starter or side for any Mediterranean style meal. We highly recommend that you serve it with fresh berries.

The amount of nutrition and goodness in this salad is off the charts. The greens combined with the berries is healthy in the extreme. And, the berries work their magic by adding some delicious sweetness to the dish.

For the Dressing

  • 2 Tablespoon fresh lemon juice
  • 2 Tablespoon honey
  • 2 Tablespoon yellow mustard (or Dijon mustard)
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon sea salt
  • Ground pepper, to taste
  • 1/4 cup olive oil

For the Salad

  • 6 ounces Arugula leaves
  • 1 cups fresh strawberries (stemmed and sliced)
  • 1 cups fresh blueberries
  • 1 cups fresh blackberries
  • 1 cups fresh raspberries
  • 2 Avocados (Sliced)
  • Salt and pepper (to taste)


For the Dressing

  1. Add all ingredients to a small mixing bowl and whisk to combine.

For the Salad

  1. Distribute the arugula evenly between on a big plate.
  2. Top evenly with strawberry, blueberries, blackberries, and/or raspberries
  3. Taste and adjust seasoning with salt and pepper.
  4. Drizzle with honey-mustard dressing just before serving.
